Get ready for a flavor bomb of a coffee. This one is pack with juicy see peaches, tart mandarine orange and a finish of bittersweet chocolate. Its probably not for everyone, but if you looking for a coffee that will make you say, “Wait, What?” when you try it, this is the coffee for you.

Grown by Jairo Arcila, this coffee is harvested at the farm Buenos Aires. His Father, Felipe Arcila is, one of the founders of Cofinet, an exporter I have working with, in Colombia. He is also a coffee producer and owns a farm with his brother, Carlos, called Jardines del Eden. Jairo purchased his first coffee farm in 1987 and now has over 15 years of experience growing his own coffee. Felipe and Jairo are dedicated and driven to make a positive impact on other coffee growers' lives and projects, through shared knowledge and hand-in-hand success. This coffee was exposed to a dry aerobic fermentation of 24 hours before being placed inside Grainpro bags for 50 hours at a temperature below 70F. Then the whole cherries were placed on raised beds until 11% moisture content is achieved. This farm is within the department of Quindio, near the city of Pijao. The farm was purchased with the intention of experimenting and finding new methods and approaches to push the boundaries of coffee. Here they grow many exotic cultivars, such as Gesha, Sudan Rume, SL-28, Wush Wush, Laurina, and more. Jardines del Eden is one of the highest altitude farms in the region.

This microlot is 100% Castillo. This variety was developed by Federación Nacional de Cafeteros. It is more productive than Caturra and resistant to coffee leaf rust.
