Brazil is the worlds largest producer of coffee, producing roughly 38% of the worlds total coffee in 2020. This contrasts countries like Colombia, a larger producer of specialty coffee, which produces roughly 8.5% of the worlds coffee in 2020. The prevalence of coffee production in Brazil is due to the climate and soil composition, allowing for over 27,000 square Kilometers to be cultivated for coffee alone. Coffee is then, understandably, a large part of Brazil’s culture with Frank Sinatra putting it best, “They put coffee in the coffee in Brazil”.
Paubrasil is a Natural process coffee, meaning they take the full coffee cherry and dry it out on raised drying beds in the sun. This drying process can last up to weeks at a time until the coffee cherry comes to a desired moisture content. Having the coffee cherry dry over time and in full contact with the mucilage, or meat of the coffee cherry give the coffee a full bodied and rich quality not found in most washed or honey coffees. Named for the countries national tree, Paubrasil is a testament to its seasonal farmers who utilized advancing technologies and procedures to ensure the quality of the coffee. Paubrasil is also a part of Regiao Cerrado Mineiro Designation of Origin program, a group of farms encompasing 55 municipalities that produce coffees with a unique identity, resulting from the combination of climate, soil, terrain, elevation, and the “know-how” of producers. This provides high levels traceability and sustainability of coffee like Paubrasil continuing to be excellent offering from Brazil.
